For fried sardines, first boil the potatoes.
In the meantime, cut open the sardines on the belly side, cut out the innards. Cut away the tail and head.
Rinse thoroughly under tap water, pat dry. Turn the fish in the juice of 2 lemons.
Peel the fully cooked potatoes, cut lengthwise into quarters. Season and fry in hot oil.
Mix the flour with paprika powder, pepper and salt, turn the sardines in it. Fry in hot oil until golden brown on both sides.
Arrange the sardines with the potato wedges and serve.
