For the Spaghetti Varese, cook the spaghetti until al dente. Save some of the cooking water.

Meanwhile, melt the butter in a large sauce pan, add the porcini mushrooms and thyme and sauté lightly.

Then stir in the gorgonzola and mascarpone. Stir well and pour in the milk. Stir in the Parmesan cheese and finally add pepper.

Dry roast the walnuts in a pan until they are brown on all sides. Then add the walnuts to the sauce. Season to taste with salt and pepper.

Add the strained spaghetti to the sauce and mix well. If necessary, add some cooking water if the sauce is too thick.

Serve the Spaghetti Varese immediately.
