For the cut pasta, cut the potatoes into flakes and pour 1l of water, season with thyme, marjoram, bay leaf, salt, 1-2 cloves of pressed garlic and cook until soft.

Sauté a finely chopped onion in fat or butter, add the flour. Mash the boiled potatoes well, add the onion/flour mixture to the potatoes, add vinegar water, stir briefly and the potato sauce is ready.

Roll out the pasta dough, cut 2-3 cm thick strips and cook in salted water and serve with potato sauce.
