For the stewed plums, wash, halve and pit the plums, mix with sugar and spices. Put them in a saucepan and stew slowly until soft, stirring frequently.

Mix the rum with the hermitage and add to the finished compote. Fill the stewed plums into glasses while still hot and seal tightly.
