Halve the rolls and cut them into slices. In a large bowl put the milk, eggs, 250g sugar, raisins and the grated zest of a lemon and mix. Pour over the sliced bread and let it soak in.Put butter in a pan and let it get hot. Add the bread mixture. Put it in the oven and bake for about 20 minutes at 200°C on both sides. Then divide the Schmarren into walnut-sized pieces (it is best to use two spoons) and sprinkle the rest of the sugar and 1 teaspoon of cinnamon over them in a pan. Arrange on a fireproof plate. Serve with stewed plums.
