Rinse the raisins hot, drain well, chop finely and sprinkle with the rum. Sprinkle the cocosette (1) and let everything swell together for an hour with the lid closed. Mix both types of flour with the baking powder and the orange zest. Mix the butter with the honey until creamy. Gradually fold in the flour mixture, the egg, the whipped cream and the swollen ingredients. Leave the dough to rest for an hour with the lid closed. Preheat the oven to 200 °C. Brush the baking tray with butter. Pour the cocosette (2) on a plate. Form walnut-sized balls from the dough, turn them in the cocosette to the other side and bake on the middle rack for about 15 minutes until golden brown. Cool the cookies on a cooling rack.
