For the gingerbread men, heat the honey to approx. 50 °C, knead with flour, almonds and gingerbread spice to a dough. Cover and let rest for 3 days.
Dissolve ammonium and potash separately with a little water and knead into the dough. Roll out the dough to a thickness of about 5 mm and cut out or cut out little men.
Brush with water, cover with almonds and bake in a preheated oven at 220 °C for about 10 minutes.
While still hot, glaze the gingerbread men with gum arabic. After cooling, decorate with the cake colors.
