Mix eggs and whipped cream, season with salt and pepper, stir in parsley. Fry shallots with ham in butter without color. Add blanched, coarsely chopped spinach and garlic, toss briefly. Pour egg mixture over it, roast until juicy. Finally, add Gorgonzola on top.

Our tip: Use the young, tender spinach from the farmers’ market!
