For the Nuremberg Gingerbread, first beat eggs with sugar until thick and creamy. Add nutmeg, ground cloves, cinnamon, mace and bitter almond oil, fold candied lemon peel, ground and chopped almonds into the egg cream.

Cover the baking tray with parchment paper. Place the wafers on it with enough space between them and make small heaps on the wafers with two teaspoons.

Bake the gingerbread in an unheated electric oven at 175 °C (gas: level 2) for 15-20 minutes.

In the meantime, for the glaze, stir the powdered sugar with the milk until thick. Brush the Nuremberg Gingerbread with the glaze while still lukewarm and decorate with whole peeled almond kernels.
