Defrost the puff pastry as indicated on the package. Strain potatoes, mix with kitchen herbs, egg, parmesan and spring onions.
Season the quantity heartily with nutmeg, pepper and salt.
Thinly butter a baking sheet.
Roll out puff pastry thinly and cut into squares 10 cm on a side.
Form 1 tablespoon of filling in the center of each square.
Fold the squares into triangles and press firmly at the edges.
Mix the egg yolks and brush the patties with them.
Put the patties on the baking tray and bake in the heated oven at 200 °C for about 20 minutes.
