Sift the flour into a large, slightly preheated baking bowl. Make a bulge in the center and pour in the finely crumbled yeast. Sprinkle with sugar and pour in half the milk. Stir with two fingers until the yeast is dissolved, then mix with a little flour to form a dough. Keep the baking bowl warm with the lid closed for 20 minutes, preferably on a chair in front of a heater.

Then cover the risen pre-dough with flour, sprinkle the salt over the flour, add the butter in flakes and the eggs mixed together. Pour in the remaining lukewarm milk and knead everything together to form a firm dough. Knead the dough until it is smooth and comes away cleanly from the baking bowl.

Let the dough rise repeatedly with the lid closed in the same warm place for 75 min.
