French Roll with Raisins

For the French rolls with raisins, first put flour, salt and sugar in a suitable bowl. Warm the milk slightly and let the yeast melt in it. Allow the fat to dissolve in the milk. Add everything to the flour and prepare a smooth dough with the dough hooks of a hand mixer. Cover and let rise in a warm place for about 30 minutes.

Knead the yeast dough again. Roll out on a floured surface to a rectangle about 45 x 30 cm. Let fat melt and spread on dough. Spread raisins, remaining sugar and cinnamon evenly on top.

Roll up the dough tightly from the long side and cut into slices about 2 1/2 cm thick. Place the slices on edge. Make a hearty dent in the center with the handle of a wooden spoon. Place French rolls on a greased baking sheet and let rise for another 30 minutes.

Stir egg yolks and 1 tablespoon water. Spread on the French rolls with raisins, bake in a heated oven (electric kitchen stove 200 °C , gas mark 3) for 10 to 15 minutes.
