A delicious mushroom dish for any occasion!
Mix cow’s milk, flour, eggs and salt and let the dough swell for half an hour.
Dice the garlic and onion and steam them with the mushrooms in butter. Season with salt, nutmeg and pepper. Add half of the cheese and the arugula to the mushroom mixture.
Fill the crêpes with it and roll them up. Place the crêpes in a greased baking dish, sprinkle with parmesan and brown in a heated oven (180 degrees) for 10 minutes.
Cut the crêpes crosswise into thirds and offer each on a large chicory leaf.
