For the soup powder, cut cherry tomatoes in half and squeeze out the seeds, place in a row on a baking sheet.
Cut leeks into fine rings, place next row on baking sheet. Chop peppers into small pieces, also make a row. Grate beet and chop cellular greens.
Put the beets on the tray, but not the greens, they will be added later, because they dry much faster.
Put the tray in the oven at 50 degrees, leave the oven door open a crack and dry everything for about 1 hour. Carefully turn the vegetables, dry for another hour, then add the celery leaves.
When everything is dry, blend in a Thermomix until small and weigh. Add 10% salt.
