First remove the stalk. Finely shave the cabbage best, salt well, pepper and add cumin.

Leave to infuse for 30-60 minutes.

Briefly sauté the cabbage in hot fat and lightly caramelize with sugar.

Deglaze with 2/3 water and 1/3 apple cider vinegar and simmer with closed lid until the liquid is reduced.

Baste the cabbage again and again with a little vinegar until it is cooked.
