Duchesse potatoes come from the French cuisine, where they are called pommes duchesse. In the classic cuisine they are a garnish for fine dishes or an addition to tender game or vegetables.

Remove the peel from the potatoes, rinse them and put them in a saucepan. Add water and salt and cook. Drain. Press through a potato ricer or strain through a sieve. Stir in butter. Season with nutmeg and maybe salt. Add 5 egg yolks. Stir until very creamy. Fill in a piping bag. Pipe small shapes onto a greased baking sheet. Mix remaining egg yolks in a cup. Brush each duchess earth apple with a little egg yolk. Or on floured surface, form small rolls from dough. Also brush with beaten egg yolk and place on greased baking sheet.

Place in the heated oven on the middle shelf. Baking time: 10 min.

Electric oven: 220 °C Take out and bring to the table hot.
