Finely grate the potatoes, place in a dish and squeeze well.

Season with fresh finely chopped chives, salt and pepper, toast from the amount about palm-sized cookies.

Top with lettuce leaf and salmon, a tiny bit of crem fraiche on top form, bring to table.

Our tip: Fresh chives are much more aromatic than dried!
