For the coffee mousse, heat water and sugar until sugar is melted. Mix eggs, chocolate and salt. Gradually add sugar mixture. Beat until mixture is smooth. Refrigerate.

Then add Kalhua and cognac. Whip cream until thick but not stiff. Stir the cream into the mousse.

Pour the coffee mousse into small bowls, decorate with chocolate sprinkles and chill well before serving.
