For the cheese sticks, finely pound the cumin in a mortar. Finely grate cheese, mix with cumin and cayenne pepper.
Roll out the puff pastry on a floured surface (25 x 18 cm), brush thinly with beaten egg yolk and cut into 12 long strips.
Sprinkle the strips with half of the cheese and roll into twisted sticks with both hands in opposite directions.
Spread out a baking sheet with baking paper. Place the sticks on it, brush with the remaining egg yolk and sprinkle with the remaining cheese.
Bake the cheese sticks in the preheated oven on the 2nd rack from the bottom at 200 degrees for 10 minutes until golden brown.
