For the Banana Tartlets with Nougat Soft Sauce, first mix the egg yolks with sugar, flour, honey and lemon juice. Beat the egg whites until firm and carefully fold into the yolk mixture.
Peel the bananas and cut into slices. Grease 4 ovenproof ramekins and fill in banana slices and batter in layers.
Bake at 200 °C until the tartlets are brown (test with chopsticks).
In the meantime, warm up the sour cherries with a little broth and the nougat cream. Stir well.
Turn out the tartlets from the ramekins. Serve the banana tarts with the nougat sauce.
