For the pumpkin seed mango cookies, grind all the oat flakes with a blender and mix with sugar.
Mix the syrup with butter, heat and mix in flakes. Preheat oven to 160 °C. Puree mango and stir in as well.
Line a baking tray with baking paper. Spread the mixture evenly on it so that it is about 0.5 cm high.
Finally, sprinkle pumpkin seeds on top and press down a little. Bake for about 15 minutes until golden brown.
Cover with honey immediately after baking. Allow to cool and cut into bite-sized pieces so that they become pumpkin seed mango cookies.
