For the pear compote, peel the pears, quarter them, remove the core and cut the fruit into bite-sized pieces.
Grate the zest from half of the lemon and squeeze the whole fruit.
Melt the butter in a pan and fry the pear pieces in it. Add honey, star anise and cinnamon.
Add pear juice and season with lemon peel and lemon juice.
Bring the pear compote to the boil once and serve lukewarm or cold.
