For the bacon curry potato salad, peel and dice the potatoes and boil them in enough salted water until done. Fry the bacon in a grill pan and then place on kitchen paper.
Then cut the bacon into pieces and mix the sour cream, curry and mayonnaise in a bowl. Add chive rolls, the cooled potatoes and the Gouda and mix everything together well.
Season with salt and pepper and garnish with parsley. Serve the bacon curry potato salad at room temperature.
