For the sponge cake coconut cubes, separate eggs. Beat egg whites until stiff peaks form. Whisk yolks, granulated sugar until foamy, stir in oil.

Sift baking powder with flour and stir into the yolk mixture with the beaten egg whites. Butter and flour a small baking tray (30 x 20 cm).

Pour in the dough and bake at 180 degrees for about 20 minutes until golden brown. Turn out the dough and let it cool down. When the sponge has cooled, cut into cubes.

For the dipping mixture, melt the chocolate and butter in a bain-marie. Stir in milk and rum and dip the sponge cubes in it and roll in coconut.
