For the hollandaise sauce, mix the ingredients together in a saucepan until cold. Then whisk at medium temperature until the sauce thickens. Gradually add the softened butter in flakes and continue whisking until the butter has dissolved.

Add the juice and zest of one lemon to the hollandaise sauce. Season with salt and pepper.
