Soak mushrooms in lukewarm water (approx. 10 min, in hot water only approx. 5 min). Soak goji berries for 40 minutes. Tip This soup can also be served cooled, e.g. in summer. It also keeps very well for a few days.
Cut the soaked morel very thinly, then boil it in sugar water and simmer for about half an hour until the mushroom is completely dissolved.
To serve, add the red fruits.
Tip: White morels
These dried white morels are really a “miracle”: one dried mushroom is enough for a whole l of soup. They have a very interesting and refreshing taste.
