For the pea puree:


Cook the meat in lightly salted water until tender, about 75 minutes.

For the puree, cook the peas with Qimiq, lemon juice and chicken stock, then puree and season with salt, cayenne pepper and chopped basil. Finally, mix in the cold butter.

Slice the smoked meat and serve with pea puree.
