Preheat oven to 200 °C. Cut zucchini into 1 cm thick longitudinal slices (bread slicer). Peel garlic and chop finely. Cut olives into slices. Brush tray with 1/2 tbsp. olive oil. Place zucchini slices end to end, season lightly with salt and drizzle with 1/2 tbsp. oil. Roast zucchini for about 20 minutes in the oven (middle rack), after 9 minutes turn to the other side. Cut the zucchini into pieces.
Make a marinade with the remaining olive oil, juice of one lemon and peel, garlic, salt and pepper. Mix the zucchini with the marinade and let it marinate a little. Finely grate the feta. Serve the zucchini sprinkled with feta and olive rings.
