For the tarte flambée, knead a smooth dough from flour, yeast, oil, salt and water. It should be soft, but not stick to your hands. Cover and let rise in a warm place until it has risen considerably.
Meanwhile, mix silken tofu with salt and pepper. Wash and slice young onions, separating white and green parts. Cut smoked tofu into small cubes.
Preheat the oven to 250 °C top and bottom heat, letting the baking tray get hot as well. Form the dough into a ball and roll out thinly on baking paper.
Spread the silken tofu evenly on it, sprinkle the white onion pieces and the smoked tofu cubes on top. Finally, spread the green onion pieces.
Place the tarte flambée with the baking paper on the hot baking tray and bake for about 15 minutes until the edges are brown.
