For the spinach tofu soup, bring the vegetable soup to a boil. Cut the tofu into 5×5 mm cubes and add to the boiling soup with the soy sauce.

Turn down heat and simmer for 2 minutes. Chop the spinach and cook for 1 minute, stirring gently.

Season the spinach tofu soup with pepper and salt and serve.
