Family: Flatfish
It owes its name to the reddish skin of the upper side. Its habitats are the European and American coasts of the northern Atlantic. The lemon sole reaches a length of 50 cm and a weight up to 1 kg. The meat of the lemon sole is white, tasty, not very firm.

Additives: Melted browned butter, hard-boiled chopped eggs, crab tails, breadcrumbs browned in butter, hollandaise sauce, white wine sauce.
