Instructions:

For the elderflower granité, mix sparkling wine with elderflower juice.

Freeze a suitable deep baking tray and pour liquid not too high (5-10 mm). Freeze overnight.

Then scrape with a spoon and immediately pour into chilled glasses.

Arrange the elderflower granité as desired with fruit pulp, fruit and possibly fresh mint.
