For the filled whole wheat snack roll, first prepare the whole wheat rolls. To do this, mix the flours and sunflower seeds together. Crumble in the fresh yeast and mix with the honey and apple cider vinegar.

Mix the yeast mixture with the flour mixture until a smooth dough is formed. Dust this with a little flour and let rise, covered, for about 1/2 hour. Mix again and add more flour if necessary if the mixture is too sticky.

Form 10 equal-sized rolls and place on a baking sheet lined with baking paper, brush the rolls with water and sprinkle with a few sunflower seeds. Place in the oven for about 50-60 minutes at 200°C top/bottom heat.

After the whole wheat rolls are done and cooled, cut them twice to make a total of three roll pieces. Smear the tops of these with butter and top with lettuce, sliced tomatoes, ham, cheese and bell pepper rings, divided between the two spaces.

Spread mustard and ketchup on the underside of each lid and serve the filled whole-grain snack roll or wrap it up as a snack.
