Arrange on a plate. Prepare a dressing with three parts olive oil, one part balsamic vinegar, one teaspoon salt, pepper, mustard and the juice of one lemon and pour it over the salad.

Dice two slices of white bread, toast in butter and olive oil with unpeeled garlic and salt until crisp.

Sprinkle with grated pecorino to serve.
