Roast Pork with Rind

Instructions:

First, score pork rind in a rhomboid manner and put a clove on each rhomboid.

Season the meat with salt and pepper.

Preheat the oven to 200 °C.

Heat the fat in a pan and brown the roast pork on all sides over medium heat. Keep basting with the hot fat.

Place the roast pork in the oven and cook for 1 to 1 1/2 hours. In between, keep basting with soup or juice.

Remove and keep warm.

Remove the roast from the bottom, add bouillon or wine and bring to the boil again. If you want the sauce to be creamier, add a little roux and bring to the boil again.

Serve the roast pork.
