For the tomato zucchini noodles, cook the rice noodles in salted water until al dente.

Dice the zucchini, heat the oil and fry the zucchini in it. Add tomatoes and simmer gently for about 10 minutes.

Strain the pasta and add to the mixture. Season with salt and basil and serve the tomato zucchini pasta.
