Select the arugula, rinse and shake dry, remove the hard stems and cut off the leaves.

Mix the prunes, spring onions, olives, tomatoes, arugula and capers with the vinegar and olive oil. Season with salt and pepper.

Serve the tartar on toasted bread slices or as a dip.
