For the tomato cutlets, flatten the pork cutlets (pound them if necessary), season with salt and pepper and coat in flour. Beat the egg.

Remove the tomatoes from the oil and chop them. Bubble tomato pieces and chopped olives into the egg, coat cutlets with it and fry them in the oil from the tomatoes.

These tomato cutlets taste like sunshine!
