A great pasta dish for any occasion:
Make a smooth pasta dough with eggs, salt, flour and water and knead well. Cut into three parts and roll out each part separately.
For the filling: cut the onion tubes into very small pieces, sauté the onion tubes in the finely chopped rendered Bödele and, once cooled, mix with the egg, minced meat, sausage meat, finely chopped parsley and season to taste with salt and freshly ground pepper. Cut out round cookies of about 8 cm in diameter from the dough patties, cover with filling, brush the edges with egg white, fold over and press down well until smooth. Place the pockets in the seasoned boiling clear soup.
Make 5 min. and let stand 10 min. Serve with chives.
