Instructions:

Rub turkey meat dry with kitchen roll. Heat clarified butter in frying pan, add meat, brown. Sprinkle with salt, paprika and flour. Mix well. Chop onion, garlic clove, lemon peel, parsley and caraway seeds, sprinkle over meat, fry briefly, remove from frying pan, keep warm.

For the sauce: pour beer into the frying pan, boil until half done. Add gravy, simmer on low heat until sauce is slightly thickened. Stir in coffee cream or possibly cream, after two minutes add the meat, heat and serve.

Sprinkle with parsley, paprika and caraway seeds of your choice.

Serve with: Long grain rice, mashed potatoes, pasta, Chnöpfli.

Variations:

* Use veal or pork instead of sliced turkey * Cook hot baked meat loaf with the same sauce – steam pepperoni strips or mushrooms.
