For the shrimp coconut curry, sauté the onion and garlic in the oil, add the shrimp and fry.
Then fry the pine nuts.
Deglaze with a little lime juice and pour in coconut milk. Cook for a few minutes so that the sauce reduces. Season to taste with curry, salt and pepper.
If you like it spicy, add one or two piri-piri to the shrimp coconut curry.
