Clean the leek, rinse, cut into rings and steam in plenty of butter. Put the steamed leek in an ovenproof dish. Season the salmon with salt and pepper and place it on the leek. Drizzle each salmon tranche with vermouth. Place the dish in the oven heated to 180 °C for 20 min.
