For the puff pastry muffins, peel and finely dice the apples, mix with 2 tablespoons sugar, flaked almonds, cinnamon and the lemon juice. Mix the whipped cream, vanilla pudding and sugar well.
Roll out the puff pastry, cut into 12 slices and line the muffin tins with them. Fill in the apple cubes and pour the custard mixture over them.
Bake the puff pastry muffins at 200 °C on the lowest rack with top and bottom heat for about 30 minutes until the surface is nicely browned.
