Spread slices of bread with butter. Remove shell from eggs and cut into slices. Halve the matjes fillets and roll them up. Cover 8 bread slices with egg and matie rolls. Garnish with tartar sauce, gherkin and chives.

For the salmon bites, top 8 slices of bread with smoked salmon and garnish with horseradish, halved lemon slices, caviar and dill.

For the trout bites, thoroughly rinse and dry leaf lettuce. Season vinegar with salt and pepper and whisk in oil. Marinate the lettuce briefly in it. Cut trout fillets into bite-sized pieces. Cover 8 slices of bread with lettuce and trout fillets. Whip the cream until stiff and pipe small dots onto the appetizers using a piping bag with a star-shaped nozzle. Garnish with cranberries.

For the shrimp appetizers, rinse and dry lettuce, toss briefly in remaining marinade, and top with remaining slices of bread. Spread shrimp evenly on top. Remove peel from garlic and chop finely or press through garlic press. Stir the juice of one lemon, garlic and mayonnaise and place in a piping bag with a nozzle. Fill dots on the appetizers and bring to the table garnished with lime wedges. Serving time: 60
