For the potato croquettes in a simple way peel potatoes, cut into quarters, place in plenty of salted water and cook until soft, about 18 minutes. Drain and let steam out briefly (best in a warm oven!). Press through a potato press or grate on a grater and pile up.
Make a small depression in the top center. Pour in the butter, beat in the egg yolks, add the flour and season with a pinch of salt and a pinch of nutmeg. If necessary, add a little more flour or 1 more egg yolk to make the dough compact and malleable.
Form into a roll, separate small pieces and form between the palms of your hands into croquettes.In a large, deep pan heat plenty of oil, put croquettes and fry in several tranches all around crispy.
Remove the potato croquettes and drain on paper towels.
