Spinach is not everyone’s cup of tea? With this recipe it is:

35 min, simply season steaks with salt and pepper, sear in a little oil on both sides.

Mix olive oil, breadcrumbs, parmesan and chopped rosemary, season strongly with little salt and freshly ground pepper. Spread the mixture evenly on the steaks and bake them in the oven at top heat for about 10-12 min.

For the potato pancakes:

Make potatoes firm, grate coarsely and mix with pepper, salt, nutmeg, egg and flour. Form loaves from the mixture and fry them on both sides in clarified butter until golden brown.

Clean and rinse spinach leaves, put them in a hot saucepan dripping wet. Steam briefly with butter until soft, season with salt and pepper.

Arrange fillet steaks on potato pancakes, bring to the table with the spinach.
