Pluck the peppermint leaves from the stems and grate them. Place the rock candy in a bulbous bottle, add the peppermint leaves, coriander seeds, the piece of lemon peel and the vanilla bean cut open lengthwise. Pour double grain schnapps over everything and close the bottle.
Leave the mixture in a warm, dark place for 6 weeks.
Now shake heartily once and pour through a muslin cloth into a decorative bottle with stubble. Seal the bottle.
Label and stick on the bottle. Wrap the gift in cellophane and decorate with the ribbons. If desired, add a sachet of peppermint patties from the pharmacy with ribbons to the neck of the bottle.
