1. squeeze curd well in a muslin cloth. Cut butter into small pieces. Quickly knead curd with butter, flour and salt until smooth.
2. rinse broccoli, clean and divide into small roses. Pre-cook broccoli (about 5 min).
3. sprinkle crab with the juice of one lemon. Mash eggs, cheese and milk and season with salt and pepper.
3. preheat oven to 200 °C.
Roll out the dough to a thickness of about 1/2 cm. Cut out approximately 10 cm thick circles and form a rim. 5.
5. spread shrimps and broccoli evenly on the dough. Pour egg-milk over the top. Bake quiches for about 20 min.
