For the peach and tomato gazpacho, peel the peaches, remove the seeds and cut into pieces. Clean the tomatoes in the same way and cut them into coarse pieces.

Put 3/4 of the peaches with 3/4 of the tomatoes in a stand blender and puree well. Cut the rest into equal-sized pieces and add to the gazpacho as a “chowder”.
