For the pancakes with chocolate syrup, separate the eggs and beat the egg whites with a little salt for at least 3 minutes until very stiff. Whisk egg yolks with spelt flour, cocoa powder, baking powder and a dash of milk. Carefully fold into the beaten egg whites.

Heat a non-stick pan and add 2 tablespoons of the mixture at a time to the pan and turn down to medium heat. When small bubbles start to rise, flip the pancakes and finish frying. Serve the pancakes with chocolate syrup and strawberries.
